🥩 CHOOSE HOW YOU WANT YOUR VENISON

We want your deer processed in a way that fits how your family eats.

Our cut sheet includes selections for:

  • Tenderloins and backstraps

  • Steaks

  • Roasts

  • Ground venison

  • Specialty sausage products

  • Added fat for ground venison

You can choose different processing options for different portions of your deer.

WANT MORE SPECIALTY PRODUCTS?

If you want a large amount of summer sausage or other value-added products, consider having one or both hams ground instead of keeping them as steaks or roasts.

This makes more meat available for specialty processing.

IMPORTANT: WHOLE DEER SUMMER SAUSAGE

Choosing to turn your entire deer into summer sausage can result in a very expensive processing bill.

Summer sausage requires additional ingredients, labor, and processing. Your final total depends on the amount of meat used and the products selected.

Please review your selections carefully before submitting your cut sheet.

Available specialty selections include summer sausage varieties such as Pepper Jack & Jalapeño. Cheese choices include cheddar and pepper jack.
